For the apricot pinwheels, remove the puff pastry from the refrigerator about 10 minutes before use and preheat the oven to 220°C. Mix curd cheese, yolks, sugar, vanilla sugar and lemon juice. Unroll puff pastry and cut into 10 x 10 cm squares with a sharp knife. Spread 1 tablespoon of filling on each pastry square. Cut diagonally from the corners of the squares toward the center and fold one corner toward the center of each. Drain fruit well and place 1 apricot half in the center of each. Bake in the oven on the middle shelf for about 15 minutes until golden brown. Boil up apricot jam with sugar and brush the freshly baked pinwheels with it.
