Rinse and pit the apricots, cut in half, and tap two stones with a hammer (place stones in an old kitchen towel for this purpose). Put the apricot almonds aside. Boil the wine vinegar with the sugar, boil the apricot halves once in it, remove them with a slotted spoon and layer them in glasses. Continue boiling the vinegar-sugar solution with the cinnamon sticks until it becomes slightly syrupy, cool a little and pour over the apricots, fill in the apricot almonds. After three to four days, pour off the solution and let it boil again, pour over the apricots once more when cooled. Close the jars, keep them cooled and dark. Serve as a dessert or as an appetizer.
