Let the yeast dissolve in 50 ml of water and stand for 10 min. Sift the flour into a suitable bowl. Make an indentation in the center. Pour in the dissolved yeast, stir with a little bit of flour to form a thin paste. Let stand for 15 min.

Mix in the salt. With a wooden spoon or a cooking spoon, add 100 ml of olive oil and 200 ml of water alternately, in portions, to form a dough. Knead this at the beginning in the baking bowl until all together flour is incorporated, then by hand on a dry surface until a smooth dough. Knead for 5 minutes. Shape into a ball. Return to the baking bowl. Cover with a wet dishcloth and rise in a warm place for 1 1/2 hours.

Shape the dough into a ball. Divide this into eight on the spot pieces and shape into balls repeatedly. Let rise for another 30 minutes. Press the balls with a rolling pin into patties 1 1/2 inches thick. Place on a greased or parchment paper-lined baking sheet. Bake in the oven heated to 250 °C for 12 min. Later cut along the edge with scissors. Serve filled with lettuce or fried minced meat.
