Instructions:

Soak rice noodles in hot water according to package directions until tender.

Clean spring onion and cut into diagonal rings. Remove seeds from chili and chop finely.

Mix all ingredients together, marinate with soy sauce, rice vinegar, the spices and the sesame oil.

Leave to marinate for a while in the refrigerator.

Serve the salad at room temperature.
