Instructions:

For the asparagus and apricot salad, wash the asparagus, remove the woody ends and peel the rest.

Either boil in a pot with plenty of water and a little butter, a pinch of sugar and a squeeze of lemon juice for about 20 minutes or steam in a steamer at 100°C for about 15 minutes. Then cut into bite-sized pieces.

Wash green asparagus only, cut off the fine tips and set aside and cut the rest into pieces as well.

Peel the onion and cut into small cubes. Wash the apricots, dry and divide into wedges.Wash the lettuce, spin dry and divide.

Mix all the ingredients for the dressing together.

Mix the lettuce, asparagus, apricots and onions and pour the dressing over them. Just before serving the asparagus and apricot salad, add the green asparagus tips.
