Instructions:

For the asparagus salad with green peppercorns, roughly crush the peppercorns with the back of a knife.

Cut the asparagus into approx. 3 cm pieces and place in a tightly sealed container. Add 50 ml of asparagus juice (either from a jar or asparagus cooking water if using fresh asparagus) to the jar and add the peppercorns, red wine vinegar, celery leaves and olive oil.

Close the jar tightly and shake everything vigorously.
