For the asparagus soup, the first step is to clean the asparagus: Cut off the ends and peel the stalks. Put the water on the stove and boil the remains of the asparagus, salt, sugar and the piece of white bread for about 10 minutes. Then strain the leftovers and collect the broth and put it back on the stove in the pot.

Peel the potato and grate it into the broth. Cut the asparagus into smaller pieces and cook in the broth, except for the tips, until the pieces are tender. Puree the soup with a blender, then add the asparagus tips and boil again until they are also soft.

Add a cup of whipped cream and season the asparagus soup to taste and serve.
