For the Aunt Therese omelet, peel the cooked potatoes and cut them into small cubes.

Also cut the onion and tomatoes. Melt the lard in a large frying pan and mix the potato cubes, onion and tomatoes with it, let everything steam a little, add salt and pepper.

Beat the eggs, pour on top and bake as an omelet.
