For the apple cinnamon muffins, in a large bowl, sift flour with baking powder and baking soda, then mix the dry ingredients, such as nuts (or nuts/poppy seeds), cinnamon and vanilla sugar well together (e.g. with a snow rod).

Then stir in the peeled, cored and chopped apples. Mix the egg with the oil briefly (do not beat too long), stir in the sugar, add the buttermilk.

Stir the liquid mixture into the dry mixture briskly with a wooden spoon. Pour into either silicone muffin tins or a muffin tray (lined with paper shapes).

If desired, place a nut on top and bake in a briefly preheated oven at 180 degrees (convection oven) for 20 – 25 minutes. Let cool briefly, remove from the mold, let cool further and enjoy.
