Make a salad dressing from the dressing ingredients.
Peel the avocado, remove the pit and cut into slices. Arrange on a large, slightly deeper platter, pour the salad dressing over and refrigerate for 20 minutes.
Rinse and spin dry the leaf lettuce, shred and divide evenly between 2 or 4 plates. Crumble the gorgonzola and sprinkle on top. Arrange avocado slices on the leaf lettuce, add croutons if desired, and drizzle with remaining salad dressing.
