For the avocados with shrimp, cut the avocados lengthwise, remove the seeds, scoop out the flesh with a spoon and sprinkle with lemon juice. Mix the mayonnaise, tomato ketchup, red wine and cognac and season with soy sauce, curry, salt, pepper and tangerine juice.

Mix the crab and the mandarin slices with the avocado flesh and spread evenly in the avocado halves and pour the sauce over them. Serve the avocados with shrimp sprinkled with chives.
