For Baba Ganoush, first preheat the oven to 240 °C. Prick the whole melanzani a few times with a fork and bake on a tray in the middle of the oven for about 30-40 minutes. Leave to cool a little in a bowl with the lid closed. Then peel the melanzani.

Peel and chop the garlic. Wash and coarsely chop the parsley. Puree together with the melanzani, garlic and lemon juice.

Season the Baba Ganoush with salt, freshly ground bell pepper, paprika powder and cumin.
