For the bacon and vegetable soup, wash and clean the vegetables. Peel onion and coarsely chop with fennel, carrots, celery, parsley root and leek.

Dice bacon and fry. Add onions, fennel, carrots, celery, parsley root and leek. Wash, dice and add tomatoes.

Peel, press and stir in garlic. Pour in water, thyme, parsley, peppercorns, cloves and ginger and let everything simmer slowly.

After about 20 minutes, strain through a sieve. Season the bacon and vegetable soup with salt and serve hot.
