Instructions:

For baked calamari, wash the calamari carefully and dry on paper towels.

Cut into rings and sprinkle with lemon juice and Tabasco, and sprinkle with salt and pepper.

For the batter, mix wine, flour, egg and salt until smooth. Improve with oil if needed.

Dredge calamari in flour, pull through batter and bake in hot oil until golden.

Drain baked calamari on a kitchen towel, arrange and serve.
