Baked Celery Sandwich Filled with Smoked Salmon

Rinse celery properly, brush and boil in salted water for 30-40 min until tender. Then briefly put in tap water and remove the peel.

Sauté shallots in a little bit of butter. Remove half of them from the frying pan and extinguish the rest with wine and meat broth.

This is reduced to the mass of a mocha cup. Cut the celery root into 5 mm thick slices. Place salmon and a few shallots on one slice at a time, parsley for it and place a second celery slice on top.

Once all the celery slices have been processed as described above, coat them in breadcrumbs. First turn them in flour to the other side, then pull them through the beaten egg and press them into the bread crumbs. Fry in clarified butter like a cutlet until done.

Add the chopped tarragon to the reduced shallot stock.

Let everything bubble up and add the butter.

Sprinkle the celery sandwich with pepper, offer with the sauce and fresh baguette bread for it, if desired.
