Instructions:

For baked eggs in spinach remove the fresh spinach from the stalk. Heat the oil in a pan and sauté the finely chopped onion and garlic. Then add the spinach (which collapses very quickly) and season to taste.

Add the sour cream and put it in an ovenproof dish. Make 3 small wells and carefully beat the eggs into them. Bake in the oven at top/bottom heat 170 degrees for about 10 minutes.
