(Fiji baked fish – Fiji Islands)

Grate coconut meat, mix with whipping cream and milk, boil and continue to boil for 10 minutes. Allow coconut mixture to cool.

Sprinkle pollock fillet with juice of one lemon and season with salt and pepper. Place fish in a greased gratin dish, pour coconut mixture on top. Place in preheated oven (center). Bake at 200 °C for 30 to 40 min.
