Rinse the stilt under cold water and drain. Boil the salted water with the cleaned, coarsely chopped greens, the peeled onion peppered with bay spice and clove, the spice grains and vinegar.

Pour in the stilton and make with the lid closed for about 2 hours. Remove, drain and cool a tiny bit. Remove the pork rind from the stilts and dry well with a kitchen towel.

For the breading, put the flour, breadcrumbs and the beaten, lightly salted egg in a deep dish.

Start by dredging the stilts in the flour, then in the egg and finally in the breadcrumbs on the other side, preferably with your hands. Repeat the breading process one more time, pressing breadcrumbs well until smooth.

Heat the fat in a deep fryer to about 175 degrees and then bake the prepared stilts in it until golden brown. Drain well on a thick layer of household paper.

Dumplings go well with it.
