For the baked potatoes with bacon and chive sauce, first preheat the oven to 220 °C (convection oven 200 °C).

Wrap the potatoes in aluminum foil and bake on the middle shelf of the oven for 1 hour.

In the meantime, prepare the chive sauce. For this, finely chop the chives and mix all the ingredients together and stir well.

Just before the end of the baking time, fry the bacon strips in a pan. No additional oil is necessary, since the bacon leaves fat anyway.

Remove the baked potatoes from the oven and take them out of the foil. Arrange on the plate, cut lengthwise, pour the chive sauce in the middle, sprinkle the bacon and then the remaining chives.

Serve the baked potatoes with bacon and chive sauce hot. Garnish with halved cocktail tomatoes if desired.
