Perhaps your new favorite bean dish:

1. defrost and skin the beans.

Stir sherry salt, vinegar, pepper and 2/3 of the olive oil into a sauce and mix with the beans. Cut chorizo (Spanish garlic sausage) into slices at the beginning, then into strips and roast heartily in the remaining olive oil. Then add onions, sauté briefly and stir into the beans. Allow to infuse for 30-40 minutes.

Stir through with strips of mint leaves and season. Serve with farmhouse bread and strong Spanish red wine.
