Cook the whole gently at low temperature for about 1 1/2 to 2 hours (in a pressure cooker about 40 min).

If there is a little bit left of the soup, it gives an excellent soup, also the rest can be served hot with a raw egg and seasoned with nutmeg.

Beef broth, called beef soup in Swabian, should never be made from stock cubes, but always from beef bones.

Working people who have little time can make both soup and Maultaschen in advance and freeze them (but only in portions or for a certain number of people).
