For the Bavarian sausage salad, first bring water to a boil in a saucepan, cook the white sausages in it for 8-10 minutes and quench in cold water. Skin the white and Regensburg sausages and cut them into slices.

Peel the onions and cut into rings, the gherkins into slices. Chop the capers coarsely. Mix the white sausages and Regensburg sausages, onions, gherkins and capers in a suitable bowl.

Mix 9 tablespoons of cucumber vinegar with mustard and white wine vinegar, add the oil. Pour the marinade over the salad, mix and let it infuse. Cut the chives into rolls.

Sprinkle over the Bavarian sausage salad before serving.
