For the BBQ mushroom burger with bacon filling, first clean the mushrooms with a brush if necessary. Turn out the stems and cut into small cubes. Cut bacon, garlic and onions into fine strips.

Brush the mushroom heads with olive oil and grill or pan fry on both sides for about 2 minutes and set aside to keep warm.

In a hot skillet, briefly fry the bacon without adding any more fat. Add mushroom cubes, onions and garlic and sauté over medium heat until golden. Remove from heat and stir in lemon juice and zest and chopped parsley. Season to taste with salt and pepper.

Stuff half of the mushroom caps lavishly with this mixture and place the other halves on top as a lid.

Serve the BBQ mushroom burgers with bacon filling right away or reheat in the preheated oven or on the grill if needed.
