Instructions:

Peel and finely chop the onion, cut the bacon into cubes. Peel carrots and celery.

Salt and pepper the beef cutlets. Coat one side with mustard and place this side in flour.

Fry the meat in a little oil on both sides and then place it in a baking dish.

Fry bacon cubes and add onion. Grate carrots and celery and fry them with bacon and onion as well.

Fry some tomato paste, dust with 1 tablespoon flour and add water. Then pour the sauce over the meat and cook for 1 ½ hours at 160 °C until soft.

Remove the meat briefly from the sauce and puree it. Season to taste with soup seasoning and salt.

Whisk 1 tablespoon flour and 1 tablespoon cream with a little water and stir into the sauce.

Arrange the beef cutlets with the root vegetables and sauce and serve with napkin dumplings.
