Instructions:

Soak the dried beetle beans in water overnight and then boil them in fresh water with salt until soft.

Thinly slice the cooked beef. Peel the onion and cut it into rings.

Wash the chives and cut them into rolls. For the marinade, mix vinegar with a little water and season with salt and pepper.

Press the garlic clove into the marinade, mix and let it stand for a while (takes the sharpness of the garlic).

Slowly pour in the kernel oil, stirring constantly.

Mix the beef with the beetle beans and carefully add the onion rings, pour the marinade over the beef and let it sit for about 10 minutes.

Put the beef salad into plates or salad bowls and garnish with the pumpkin seeds and parsley.
