Clean root vegetables, onion and leek, wash, cut into slices or halve lengthwise. Wash the bones warm. Put beef, bones cut into smaller pieces (the butcher can do this for you) and liver cut into small cubes into cold water, put chopped vegetables, peppercorns, tomatoes, lovage, parsley and a pinch of salt. Bring the soup to a boil, reduce the heat and simmer on a low flame for 2-3 hours. Skim off the foam in between. Finally, degrease the soup (pour a little cold water into the soup). Then strain (through a thin-meshed sieve or linen cloth). Finally, add a few slices of separately warmed beef marrow to the soup. Strain with salt, wash chives, cut into fine rolls and add to soup.
