For the raw beet, mix sour cream with lemon juice and horseradish. Peel the beet and slice into very fine sticks or grate coarsely into the sour cream.

Wash the apple, remove the core and also shave into fine sticks or coarsely grate into the sour cream. Fold in apple and beet. Wash lettuce leaves and pat dry.

Arrange the raw beet on plates and spread the raw vegetables on top. Sprinkle with parsley.
