For the beetle bean soup, first soak the beans in water overnight.

The next day, peel onions and quarter two of them. Chop the third onion into small pieces. Peel the garlic clove. Finely slice the yellow beets. Peel and dice the potatoes. Cut the sausage into thin slices. Dice the bacon.

Drain the beans and boil them in a pot of fresh water. Then strain again. Add warm water again. Add onion quarters, garlic and a little salt. Cook the beans until tender.

Sauté the chopped onion in a pot with oil until light. Add the potatoes and turnips. Add bacon cubes. Dust with paprika powder. Then pour in the water. Simmer until the vegetables are soft.

Mix the beans with the vegetables. Add the soup and add the sausage slices. Cook briefly together, season with salt, pepper and cumin and serve the beetle bean soup hot.
