Try this delicious cake recipe:

The Birmenstorf countrywomen created this cake on the occasion of their 50th anniversary in 1988.

Clean the apples, remove the core, cut into slices and mix well with the juice of one lemon, sugar and raisins.

Beat the butter, sugar and eggs until creamy, add the remaining ingredients and make a fairly firm dough. Pour the mixture into the buttered pan, smooth it out and raise the edges by 3 to 4 cm with the back of a spoon that has been rinsed and cooled.

For the filling, sprinkle the hazelnuts on the pastry base and spread the apple filling evenly on top.

For the icing, mix well all ingredients up to and including the vanilla sugar. Whip the egg whites into beaten egg whites and fold into the curd mixture, spread evenly over the apple filling.

Bake in the oven on the lowest shelf at 180 °C for about 70 minutes.

Remove from the oven, cool a little and remove from the pan. Cool on a cooling rack and dust the surface with powdered sugar if desired.
