For the blackberry elderberry jam, wash the elderberries, drain well and scrape off the berries (with a coarse-pointed fork). Mix with lemon juice and about 1/3 of the Viennese jelling sugar and leave covered in a cool place for 2-3 hours.

Then boil once, strain through a hair sieve and bring the puree to a boil in a saucepan with the remaining jelling sugar while stirring, boil for 6-8 minutes until bubbly and test for gelatinization. Pour into prepared Viennese jelly sugar jars and seal the blackberry elderberry jam tightly.
