For the blackberry syrup, first wash the blackberries if necessary, squeeze the lemons, add the star anise and mix with the water in a large pot. Using a potato masher or your bare hands, mash the blackberries a bit and let stand for about 2 hours.

Then bring to a boil and simmer for about 5 minutes. Drain the mixture in a juice cloth. If desired, squeeze the juice cloth. There should be about 2 liters of juice. If it is less, then adjust the amount of sugar – for example, if you have 1.7 liters of juice, take only 1.7 kg of sugar. Heat the sugar and juice together, skim off the foam, simmer for about 4 minutes.

Pour the blackberry syrup into twist-off bottles and let cool.
