For the blue cabbage with orange, first cut the cabbage head in half and remove the stalk. Cut the cabbage into fine strips and place in a large pot with a little water. Steam the cabbage for a few minutes until it has collapsed a bit.

Grate the zest from the orange and set aside. Squeeze the juice and add to the cabbage along with the finely chopped pepperoni. Season with nutmeg and salt.

Finally, mix in the flaxseed oil, baking soda, and orange zest and continue steaming briefly. Since the red cabbage contains a natural indicator (dye that changes color depending on the pH), the initially reddish cabbage gets a violet-blue cast after adding the baking powder. Serve blue cabbage with orange while still warm.
