For the blueberry pancake, in a bowl, beat egg whites with sugar until firm.
In another bowl, whisk together milk, flour, egg yolks, blueberries, slivered almonds, lemon juice, rum, vanilla sugar and 1 pinch of salt until smooth.
Gently fold the beaten egg whites loosely into the batter. Pour 1 tsp butter into the pan, pour the batter into the baking pan of the Philips Airfryer hot air fryer and bake at 180 °C for 10-13 minutes.
Dust the pancake with powdered sugar and let it caramelize for another 5 minutes.
Then remove the insert and pick apart the blueberry pancake with 2 wooden spoons.
Serve with cranberries and applesauce.
