For braised wild garlic veal cutlet finely chop onion, cut wild garlic into strips. Season veal escalopes with salt and pepper. Preheat oven to 150 degrees convection.

Put some butter in a pan, fry the veal escalopes in it and remove from the pan. Fry the onion briefly in the frying fat, put the veal escalopes back in, add the wild garlic and pour on some veal stock.

Put the pan with the lid in the oven and let it stew for about 30 minutes. If necessary, season with salt and pepper.
