Breaded Pumpkin Wedges

Instructions:

Cut the pumpkin flesh into thin slices.

Mix the breadcrumbs with the parmesan and season.

Mix the eggs with the spices.

Roll the pumpkin wedges first in the eggs, then in the breadcrumb mixture.

Place the breaded pumpkin slices on a baking tray lined with parchment paper and bake in a heated oven at 200 degrees for about 7 minutes. Then turn the pumpkin wedges to the other side and bake for another 7 min.

These breaded pumpkin wedges are much lower in fat and thus ditto more digestible than greens baked in the deep fryer! Try it!

The pumpkin wedges can be served warm with a Paradeiser sauce or cooled down, e.g. with a pumpkin remoulade.

Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
