For the brioche with pumpkin seeds sift flour, dissolve yeast in a little lukewarm milk and sugar and add to the flour mixture together with lukewarm butter, egg yolks, salt, pumpkin seeds and lemon zest. Mix all the ingredients to form a dough. Beat the dough until it is silky smooth and bubbles. Then cover and let rise in a warm place for 30 minutes.

Then divide the dough into thirds, shape into balls, braid and let rise for another 30 minutes. Brush with egg yolk and sprinkle with hail sugar or pumpkin brittle. Then bake the brioche with pumpkin seeds in the oven at 170°C for about 20 – 25 minutes (until golden brown color).
