For the broad bean puree with bacon, remove the beans from the pods. There should be about 1/2 kg of bean seeds left.

Bring the beef broth to a boil in a large pot, add the bean seeds and simmer for about 20 minutes until the beans are tender.

Cut the bacon into strips or cubes and fry in a pan until crisp.

Puree the beans with a hand blender and stir in the crème fraiche. Season to taste with salt and pepper.

Arrange the broad bean puree with bacon in soup bowls or plates, serve with the crispy bacon and sprinkled with the chives.
