For the broccoli omelet with salmon, clean, rinse and divide broccoli into small roses. Blanch in boiling hot salted water for 5 min and drain.

Peel and finely dice onion. Mix egg yolks, salt and milk. Fold in flour. Whip egg whites until stiff and also fold in (carefully).

Fry onion cubes and broccoli in hot oil. Add a quarter of the batter to each and bake into 4 golden brown pancakes. Serve with salmon and whipped horseradish and bring the broccoli omelet with salmon to the table garnished with dill and lemon.
