Instructions:

Roll out one third of the dough to the size of a baking tray, place on parchment paper, roll up and leave to cool. Roll out the remaining dough into a slightly larger rectangle and spread it out on the greased baking tray so that the dough protrudes by about 1 cm. Put the rest of the dough aside for the garnish. Prick bottom well with a fork.

Cut broccoli into small rounds and blanch in salted water for 2 minutes. Spread the ham evenly on the pastry base. Rinse the leek thoroughly and place it in fine strips on the ham form.

Spread the broccoli evenly over the leek. Sprinkle the coarsely diced feta over the vegetables.

Warm the butter in a frying pan, add the flour and sauté briefly. Pour in the vegetable soup and stir well with the whisk. Bring to a boil with the added whipping cream while stirring and season with the crushed garlic, pepper and a little salt. Simmer gently for 2 minutes. Fold in the beaten egg and pour the sauce over the filling.

Brush the edge with the beaten egg white and stick the pastry lid with it. Glue strips of dough scraps with egg white. Brush the pie with the thinned egg yolk, prick a few times with a fork and bake on the spot at 200 degrees on the lowest rack for 35 minutes.

Tip: It is best to use your favorite ham – then your dish tastes twice as good!
