Instructions:

For the broccoli soup with mozzarella, first peel and finely chop the onion and garlic. Sauté in a pot in a little oil. Add broccoli and pour stock and water. Simmer until broccoli is soft and then add whipping cream and puree. Season to taste with salt and pepper.

In the meantime, drain the mozzarella well and cut into slices. Coat with breadcrumbs. Fry briefly in a little oil on both sides until crispy.

Arrange broccoli soup with mozzarella and serve.
