Instructions:

Remove the peel from the pumpkin, cut into small cubes and place briefly in an ovenproof dish with a little olive oil, salt and pepper.

Roast the pumpkin cubes in the oven for about 20 minutes at 180 °C hot air.

Prepare the quinoa according to the package instructions.

Halve the avocado and cut into strips.

Place the lettuce in a bowl and arrange the quinoa, avocado, spinach leaves and pumpkin on top.

For the dressing, whisk together walnut oil, apple cider vinegar, lemon juice, salt and pepper. Pour the dressing over the Buddha Bowl, garnish with raisins and walnut kernels.
