Flour in the baking bowl of a food processor form. Crumble the yeast into the flour on one side and stir with the milk and orange blossom water to form a dampfl. Let it rise at about 30 degrees in a warm place in the kitchen until the dough throws small bubbles and has increased considerably in size. Add one egg and one egg yolk, the sugar and the salt, and 100 g of very soft butter (heat briefly in the microwave). Mix in a food processor on low speed and knead on medium speed until the dough separates from the edge of the bowl. This will take about 12 min. On top of that, rise in a warm place, e.g. in a slightly heated oven (30 degrees ) until the dough volume has more than doubled. Carefully remove the dough from the baking bowl and spread it evenly on a baking sheet lined with parchment paper.

Evenly distribute butter cubes on top and lightly press until smooth.

Mix the almond flakes with 100 g of cane sugar and a good pinch of salt, then add the maple syrup, heat a little in the microwave and mix everything together. Spread evenly over the dough. Let rise for another ten min, then bake for about 20 min at 210 °C.

For the elderberry juice, mash 1000 g of elderberries in a “Flotten Lotte” (or a sieve), crushing the berries slightly. Mix well with 100g of cane sugar and steep for one night. The following day, pass through the fine slice d
