For the buttermilk pancakes, first sift the flour and mix with the other dry ingredients. Lightly beat the eggs, gradually add the buttermilk and melted butter. Make a bulge in the center of the dry ingredients and pour in the egg mixture. Stir the whole thing together until smooth.

Using a large spoon, bake in hot fat until golden brown. When bubbles form, flip the pancake and bake the second side until golden. Serve the buttermilk pancakes while still warm.
