For the roasted butternut squash, preheat the oven to 200 °C. Peel the pumpkin and cut into cubes of about 2 cm. Put the cubes in a bowl and pour the olive oil over them.

Grate the garlic cloves and mix with the pumpkin cubes. Crush the pepper, sea salt and cumin together in a mortar. Spread the pumpkin pieces on a baking paper and season.

For about 30 minutes in the oven (depending on the size of the pumpkin pieces). Roughly chop the herbs (I like to use parsley, marjoram and some lemon thyme).

When the pumpkin is nicely roasted, mix in the herbs.
