Cabbage Noodle Roll with Mince

Instructions:

For the pasta dough, knead together flour, eggs, oil (1) and salt (1) until smooth. Let the dough rest for about half an hour with the lid closed. In the meantime, clean and rinse savoy cabbage and cut into strips. Remove the skin from the onion (1) and dice finely. Heat oil (2) in a large saucepan. Sauté the onion and the cabbage in it. Douse with water. Bring to a boil and simmer for about 10 minutes. Season with salt, pepper and nutmeg, cool. Finely grate cheese. Roll out pasta dough thinly on a clean kitchen towel (approx. 30 x 40 cm). Spread minced meat, cabbage and cheese evenly on it. Roll up from the narrow side using the towel, tie the ends of the towel. Put the roll into salted boiling water and cook for 40 minutes. Remove the garlic from the skin and chop it. Heat oil (3). Sauté garlic and diced onions (2) until soft. Add paradeis pulp, paradeis and thyme. Bring to a boil and simmer over medium heat for about 5 minutes. Season tomato sauce with salt, pepper, cayenne pepper and sugar. Rinse and chop the parsley. Remove pasta roll from dish. Serve with tomato sauce and sprinkle with parsley.
