For the cabbage soup, first rinse all the vegetables.

Cut cabbage into small pieces. Peel and chop the carrots and onions. Remove the core from the bell bell pepper, cut the flesh into small pieces. Clean and chop both types of celery as well. Put the vegetables in a large saucepan and cover with plenty of water.

Bring to a boil and simmer for 10 minutes, then reduce heat to low and simmer for 20 to 25 minutes.

Season the soup with thyme, pepper, curry powder, chili and balsamic vinegar or other spices. However, you can do without salt! Serve the cabbage soup in plates.
