For the cabbage sprout soup, fry onion with bacon and pour soup.

Boil cabbage sprouts and peeled potato.

Blend cooked cabbage sprouts and cooked peeled potato into soup using a blender. Stir in creme fraiche.

Season with salt, pepper and nutmeg and serve the cabbage sprout soup with toasted croutons.
