A cake recipe for all foodies:

In a baking bowl, whisk together milk, eggs, flour, sugar, salt and the grated lemon zest until a smooth batter is formed. Spread the dough through a sieve, assuming that it has not become smooth enough. Later add the raisins and let everything rest together for 10 to 15 min.

Peel and core the apples and cut them into wedges. Put apple juice in a saucepan and make the apple slices in it in 5 to 10 min to a compote, which should still have a little “bite”. Add a little sugar if desired.

In a hot frying pan with a little bit of liquid butter, fry the dough, which has been stirred repeatedly for a short time, gradually to form several pancakes, golden on both sides. Then cut these pancakes into diamond-shaped bite-sized pieces.

In a second frying pan, stir sugar and butter until light brown and caramelized. Briefly toss the pancake lozenges in it.

Serve: Place the caramelized Kaiserschmarrn on one half of each plate and the compote on the other half. If desired, sprinkle with powdered sugar (best through a sieve).
