For the carrot and potato soup with farmer croutons, wash carrots and potatoes. Peel carrots only if necessary and cut into fine pieces. Peel potatoes and cut into pieces.

Chop onion and a clove of garlic. Heat some butter in a pot. Sauté onion, garlic, carrots and potato in it, dust with a little flour and pour in water.

Season with soup seasoning, salt and pepper and simmer for about 20 minutes. Then puree and refine with whipped cream. Season to taste.

For the farmer croutons, cut the Vinschgerl into cubes. Chop the second clove of garlic very finely. Heat 3 tablespoons of olive oil in a pan.

Fry the bread cubes, garlic and rosemary in it, tossing again and again. Serve the soup with croutons and fresh chives.
