For the carrot muffins, preheat the oven to 180 degrees and place the paper shapes in the muffin tray.

In a bowl, mix flour, sugar, baking soda, baking powder, salt and cinnamon. Add nuts and shredded coconut.

In a second bowl, whisk together eggs, oil and vanilla sugar.

Gently mix the wet mixture together with the carrots and apple into the flour mixture.

Pour the batter into the paper cups and bake the carrot muffins for about 20-25 minutes on the middle rack.
